3/4 stick of butter 1 med. onion 1 c. uncooked rice 2 cans undiluted beef consomme 2 (3 oz.) cans whole mushrooms 1/2 tsp. salt Melt butter in skillet; add onion (chopped fine) and saute until transparent. Add rice and salt. Stir well until rice is yellow. Turn into 1 1/2 to 2 quart casserole add consomme and mushrooms (including liquid). Cover and bake in 325 degree oven until rice is puffed and tender. Usually takes an hour to bake. |
