Peel and cube 8 potatoes; rinse in water. Take 1 stick of butter (or butter) and melt in the oven on cookie sheet (with sides). While that's in the oven melting, mix: 1 c. Parmesan cheese
Coat the drained, wet cubed potatoes with this mixture, then put on cookie sheet with the melted butter (or butter). Bake at 375 degrees for 1 hour (or less if your oven browns them faster); 1/2 way through baking turn them over. Very tastey as leftovers, too!
