BAKED PLANTAINS
 

Choose ripe plantains. They should be yellow with black spots on the outside, and soft but not mushy on the inside. Peel them and place in a well buttered baking dish. Sprinkle with sugar, cinnamon if desired and dot with butter; bake at 375 degrees until well browned. They may be sliced lengthwise and filled with cheese (white) before baking.
