1 head of cauliflower Equal amount of broccoli Rich Cream Sauce (4 tbsp. butter, 2 c. milk (1 c. can be cream), 6 tsp. flour, and salt and pepper) 1 c. grated Swiss or Cheddar cheese 2/3 c. toasted bread crumbs Cook a head of cauliflower and an equal amount of broccoli. Put into buttered casserole. Rich Cream Sauce: Melt butter. Blend in flour, slowly adding milk. Cook slowly until thickened; season with salt and pepper. Pour this over vegetable in casserole. Sprinkle with 1 cup Swiss or Cheddar and 2/3 cup toasted bread crumbs browned in butter. Heat in 450 degree oven until cheese is melted and bubbly. |
