ROASTED RED POTATOES
 

2 lbs. sm. red potatoes with skin on
1 pkg. dry onion soup mix
3 tbsp. cooking oil

Wash potatoes, pat dry, leave on skin, cut into 1" pieces. In large bowl toss potato pieces with the oil until coated. Sprinkle soup mix over potatoes and continue tossing until evenly mixed. Place in baking dish and roast at 425 degrees for 40 to 45 minutes, covered for first 20 minutes.
