2 lbs. sm. red potatoes, halved 3 tbsp. olive oil 1/2 tsp. salt 1/2 tsp. pepper 1/2 tsp. paprika In a small roasting pan, toss the potatoes with the oil. Arrange potatoes in pan, cut side down. Sprinkle the salt, pepper and paprika on top. Bake in a preheated 425 degree oven for 25 minutes until potatoes are tender inside and undersides are crusty brown. Serve immediately. Serves 4. |
