8 med. size sweet potatoes, each cut into 4 pieces or 4 lbs. canned sweet potatoes 6 tbsp. butter 1/2 c. light brown sugar Grated rind of 2 oranges 3/4 c. orange juice 1/4 c. dark Jamaica rum Salt and pepper Boil fresh sweet potatoes, unpeeled, in salted water until tender. Drain and slip off the skins. Mash the potatoes with all the remaining ingredients. The mixture will be softer than regular mashed potatoes. Put in a buttered casserole. Bake covered for 30 minutes at 350 degrees. |
