Red potatoes Cheddar cheese Fresh chives Sour cream Freshly grated black pepper Boil red potatoes until soft (skin left on). Drain and cool. Slice potatoes into 1/4 inch slices. Coat a shallow baking dish with cooking spray. Spread potato slices one layer thick in dish and cover with Cheddar cheese. Sprinkle with chives. Bake in preheated oven at 400 degrees until cheese is bubbly. Serve with sour cream and pepper. |
