1 sm. head of red cabbage
Shred and soak in cold water 1 to 2 hours. Take from water and put in large pot. Only the water that clings to the cabbage to be used.
Add:
1/2 tsp. salt 1 onion, chopped 1 med. apple, peeled, cored, chopped
Cook until cabbage is tender. Add 1/4 to 1/2 teaspoon nutmeg and a few grains of cayenne or crushed red pepper. Add 2 to 3 tablespoons vinegar (wine vinegar may be used) and 1 to 2 tablespoons of sugar. Cook 5 minutes. Test for tartness, adding more vinegar and sugar if desired. Good with pot roast and boiled potatoes.
