BAKED BEANS
 

1 lb. sm. Navy beans
1/4 tsp. baking soda
1/2 lb. bacon
Pinch of salt
3/4 c. dark brown sugar
1 1/3 c. ketchup
1 tbsp. vinegar

Soak beans overnight. Rinse. Cover with cold water and add baking soda. Bring to a boil. Remove from heat. Rinse and drain. Cover with boiling water. Add bacon and pinch of salt. Simmer, covered, 35 minutes. Remove from heat. Transfer to bean pot or ovenproof bowl (do not drain). Combine brown sugar, ketchup and vinegar. Add to beans and mix. Bake, uncovered, at 275 degrees for approximately 5 or 6 hours. Stir occasionally. Add water if they become dry.
