ROAST POTATOES WITH FINE HERBS
 

Heat oven to 325 degrees. 1/4 c. butter, melted 2 tsp. paprika 1 tsp. fine herbs (parsley, chervil, chives, tarragon)

Cut unpared potatoes lengthwise in half. Brush cut surfaces with melted butter; sprinkle with paprika and herbs. Place on baking sheet. Bake until tender, about 1 hour. Serve on platter with roast, if desired.
