CAULIFLOWER AND CHEESE BAKE
 

2 tbsp. reduced calorie butter
6 saltine crackers, crumbled
1 (10 oz,) pkg. frozen cauliflower, cooked and drained
4 oz. Velveeta cheese, cut into 1/2-inch cubes

In a small skillet melt the butter over low heat. Add the cracker crumbs and cook, stirring constantly, until the crumbs are lightly browned. Remove the skillet from the heat and set aside.

Spray a 1-quart casserole dish with nonstick cooking spray. Arrange the cauliflower in the casserole; top with cheese and sprinkle with the crumb mixture. Cover. Bake in a 350 degree oven for about 20 minutes, until the cheese is melted. Serves 2.
