FRIED CABBAGE

Heat a large heavy frying pan with a little oil to coat the bottom well. Cut a medium sized cabbage into 1 x 2 inch strips or however you like. Put cabbage into pan and stir until it is coated with oil and stir this around until a few pieces of the cabbage begin to turn brown just a little, then add about 1/4 cup of cool water and put the lid on quickly. Cook for a few minutes until the cabbage is as tender as you like it and remove from heat.

At this point you can add a little honey and cinnamon and a little grated cheese if you like. I like it with the cinnamon quite a lot. Red cabbage is interesting in this recipe, but don't cook it too much or it will turn dull colored.
