PERUVIAN SAUCE: 10 potatoes, boiled and slice in half 3 hard-boiled eggs, sliced vertical in four, to garnish 10 pitted olives, to garnish Parsley to garnish 1 med. red onion, sliced very thin, rinsed in water, seasoned with salt, to garnish 10 leaves of lettuce, to garnish, 1 for each potato SAUCE: In a blender put all the following ingredients: 1 lb. cottage cheese 1 tsp. Turmeric gives taste and color to the sauce 1/2 clove garlic (optional) Salt to taste Hot green or red hot pepper to the taste (half of 1 med. size) 1 tbsp. oil, or enough to blend 4 tbsp. evaporated milk, or enough to blend Dash of black ground pepper 1/2 tsp. lime, to taste Sauce should be lightly thick to be spread over the potatoes. |
