2 c. shredded zucchini
2 tbsp. butter
1/4 c. Parmesan cheese
2 eggs
1/2 c. Bisquick mix
In bowl, stir together Bisquick, cheese and a little salt and pepper. Stir in beaten eggs until mixture is moistened. Fold in zucchini.
In skillet, melt butter over medium heat. Drop 2 tablespoons for each fritter and fry 3 to 5 minutes on each side. Makes 8 to 10 fritters.
