2 c. grated zucchini 1/4 tsp. garlic powder 1/4 tsp. oregano Dash of pepper 1 tbsp. grated Parmesan cheese 2 tbsp. chopped parsley 2 eggs 1 c. flour Beat all ingredients with a spoon. Drop by tablespoons in 1 cup of hot oil in heavy frying pan and cook slowly on medium heat, turning often. Drain on paper towels. Makes approximately 20 fritters. |
