ZUCCHINI CASSEROLE
 

2-3 med. size zucchini, cut lengthwise
Small carton sour cream
1 lg. can whole tomatoes
1-1 1/2 lb. ground beef or turkey
1 onion, sliced
Salt & pepper to taste
Garlic salt to taste or 1 clove, crushed
Mozzarella cheese for topping

Brown onion. Add meat and brown. Add tomatoes (drained). Add spices and small container of sour cream. Simmer.

Slice zucchini, 1/4 inch thick into casserole dish. Cover with meat sauce, then layer of zucchini and rest of meat sauce. Cover and bake at 350 degrees for 30 minutes. Remove cover and add sliced mozzarella cheese. Bake additional 30 minutes at 250 degrees. Serve over bed of noodles.
