1 1/2 lb. zucchini and yellow squash 2 onions, thickly sliced 1 c. boiling water 1/2 lb. American cheese (may substitute) 1/2 c. milk 1/4 c. vegetable oil 1/4 tsp. salt 1/4 tsp. pepper 3/4 c. bread crumbs or cracker crumbs 4 tbsp. butter Cook zucchini, squash and onion. Drain; save liquid. Alternate layer of vegetables with layer of cheese (2 layers each). Pour milk over this with seasonings. Sprinkle with buttered crumbs. Bake at 350 degrees for 45 minutes to 1 hour. Good reheated next day. |
