ZUCCHINI AND TOMATO CASSEROLE
 

6 sm. zucchini, cut crosswise in 1/4 inch slices
1 med. onion, sliced thinly
2 lg. tomatoes, cut in sm. pieces
1/2 c. cheddar cheese, shredded
1 tsp. salt
Dash of pepper
3 tbsp. butter, cut in sm. pieces
2 tbsp. soy sauce

Mix all ingredients well. Put in casserole and in oven cook at 350 degrees until tender, about 1/2 hour.
