ZUCCHINI SQUASH CASSEROLE
 

5 or 6 lg. zucchini squashes
1 sm. onion, chopped
3 eggs
3/4 c. milk
1 c. grated cheese (cheddar)
2 tbsp. butter
1 c. cracker crumbs
Salt and pepper

Wash squashes, slice thin. Boil until tender, drain and place in a greased casserole dish. Combine eggs, milk, onion, butter, salt and pepper and half of the cheese. Pour over squash and mix well.

Spread crumbs on top and bake in 350 degree oven 20 minutes. Then spread remainder of the cheese on top and bake 10 or 15 minutes longer until cheese melts and browns lightly.
