ZUCCHINI BARS
 

1 1/2 c. firmly packed brown sugar
1/2 c. butter, softened
1/4 c. vegetable oil
2 eggs
2 tbsp. water
1 tsp. vanilla extract
1/4 tsp. ground nutmeg
1 1/2 c. shreds of wheat bran cereal
1 1/2 c. all-purpose flour
1/2 c. whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
2 1/2 c. grated zucchini
1 c. raisins
1 c. flaked coconut

Combine first 3 ingredients in a large mixing bowl; beat at medium speed of an electric mixer until light and fluffy. Add eggs, water, vanilla and nutmeg; mix until blended.

Combine cereal, flour, soda and salt; add to creamed mixture alternately with zucchini, beginning and ending with flour mixture. Mix just until blended after each addition. Stir in raisins and coconut.

Spoon batter into greased 13x9x2 inch baking pan. Bake at 350 degrees for 40 minutes. Cool and cut into bars. Yield: 3 dozen.
