BRUNCH HAM AND CHEESE SOUFFLE
 

16 slices white bread, buttered with crusts cut off and cubed
1/2 lb. ham or sausage, cubed
6 eggs, beaten
3 c. milk
1/2 tsp. dry mustard
1/8 tsp. Tabasco sauce
Ground black pepper
1 c. sharp Cheddar, grated
1 c. grated Swiss
3 c. cornflakes, crushed
1/2 c. butter, melted

Cook ham or sausage. Grease 9 x 13 inch glass baking dish. Spread half the bread cubes on bottom of dish. Pour half of egg and cheese mixture over bread. Cover with remaining bread cubes, then remaining egg mixture. Melt butter, mix with cornflakes and place on top of souffle. Refrigerate overnight. Bake at 375 degrees for 40 minutes.
