QUICHE LORRAINE BRUNCH ENTREE
 

1 (9") prepared pie crust (deep dish, frozen)
12 slices bacon, crisply fried & crumbled
1 c. Swiss cheese, shredded
1/3 c. minced onion
4 eggs
2 c. light cream or whipping cream
3/4 tsp. salt
1/4 tsp. sugar
1/8 tsp. red pepper (opt.)

Heat oven to 425 degrees. Sprinkle bacon, cheese and onion into prepared pie crust. With rotary beater, blend remaining ingredients; pour into pie crust. Bake 15 minutes. Reduce oven temperature to 300 degrees. Bake pie 30 minutes longer or until knife inserted 1" from edge comes out clean. Let pie stand 10 minutes before cutting. Serve in wedges. Makes 6 servings.
