Place 2 1/2 cups herb-seasoned croutons in bottom of greased 9x13 inch pan. Top with 2 cups shredded Cheddar cheese. Brown 2 packages Jimmy Dean plain sausage. Drain well. Place over cheese layer.
Beat 4 eggs with 3/4 teaspoon dry mustard and 2 1/2 cups milk. Pour over ingredients in pan. Cover and refrigerate overnight.
Before baking, mix together 1 can cream of mushroom soup and 1/2 cup milk. Frost over ingredients. Bake at 350 degrees for 1 1/2 hours. Cover halfway through. Serves about 9.
