Soak 1 cup bran in 1 cup buttermilk for 5 minutes. Cream together: 3 tbsp. melted butter 1 beaten egg 1/3 c. maple syrup Add to bran and buttermilk. Mix: 1 c. whole wheat flour 1/2 c. rolled oats 2 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt 3/4 c. chopped walnuts Fold in: 1 1/2 c. fresh or frozen raspberries, blackberries or blueberries Pour into well buttered tins or cups and bake in a preheated 375 degree oven for 30 minutes. Makes 10-12 large muffins. |
