CORN TORTILLA PIE
 

1 lb. extra lean ground beef or ground turkey
2 lg. onions, chopped
1 (8 oz.) can tomato sauce (no salt)
1 (16 oz.) jar thick and chunky salsa
1 tsp. ground cumin
1 tsp. chili powder
1 (17 oz.) can creamed corn (no salt)
10-16 oz. frozen corn (thawed slightly)
12 corn tortillas, cut into 1 inch strips
1/2 c. grated, part skim Mozzarella cheese
1/2 c. grated, low fat Cheddar cheese

Preheat oven to 350 degrees. Spray a large skillet with nonstick vegetable spray. Brown meat with onion. Add tomato and salsa sauces, cumin, chili and garlic powders, and corn. Mix well.

Spray a 9x12 inch pan with nonstick vegetable spray. Layer mixture with tortillas, starting with one fourth of meat mixture and topping with one third of the tortilla strips. Continue layering, ending with the meat mixture. Cover and bake for 35-40 minutes or until thoroughly heated. Add cheese and cook another 5 minutes.
