2 tbsp. olive oil 1 lb. skinless deboned chicken/turkey breast, 1 inch diced 3 shallots, chopped 3 garlic cloves, chopped 1 (18 oz.) can tomatillos (green tomatoes), chopped 1 (14 1/2 oz.) can tomatoes 1 (10 1/2 oz.) can chicken broth 1 (7 oz.) can diced green chilies (mild) 1/4 tsp. cumin 1/2 tsp. oregano 1/2 tsp. coriander 2 (15 oz.) cans white kidney beans Juice of 1 lime Chopped red onion Fresh cilantro Sour cream Saute chicken in olive oil until beginning to brown - set aside. To pan, add shallots and garlic - saute. Stir in tomatillos, tomatoes with liquid, broth, chilies, spices. Bring to a boil and simmer 20 minutes. Add chicken and drained beans, cook 5 minutes. Add lime juice. Salt and pepper to taste. Garnish with onion, cilantro and sour cream. Enjoy! |
