FIXING BULGER
 

Bulger (cracked wheat) and kasha (buckwheat groats) are very nice in that they don't require cooking, and can be stored in a jar in the refrigerator forever.

There are 3 methods for fixing bulger, yielding only slightly different textures.

METHOD 1: Pour 3/4 cup boiling water over each 1/2 cup bulger. Let stand 20 minutes until water is absorbed.

METHOD 2: Pour 1 1/2 cups boiling water over each 1/2 cup bulger. Let stand 2 hours. Drain very well.

METHOD 3: Boil 1 cup water, add 1/2 cup bulger, simmer until water is absorbed. This is my personal preference because it is easier to chew.
