2 1/2 to 3 lbs. very lean beef 1/2 c. chopped green pepper 1 c. chopped celery 1 c. carrots, cut in strips 1 (#2) can tomatoes 1 sm. can tomato juice or beef broth 1 tbsp. salt 1 tbsp. sugar 3 rounded tbsp. tapioca (for thickening) 1-2 tbsp. sherry Optional additions: Mushrooms (added last 30 min.) Garlic Thyme Canned peas (drained, added last 30 min.) This may be made and cooked a day or so ahead and reheated adding mushrooms and sherry at last heating. Cook in covered casserole (or crockpot) at 300 degrees for 4-5 hours. |
