CAULIFLOWER SOUP
 

1 pkg. frozen cauliflower
1 tbsp. butter
1/2 tsp. salt
1 c. boiling water
1/8 tsp. nutmeg
1/2 med. onion, sliced
1 can potato soup
1/2 c. cream or milk

Simmer cauliflower, butter, salt, water, nutmeg, and onion, covered for 5 minutes. Pour simmered vegetables and liquid into blender. Add potato soup. Cover and blend. Add cream or milk. Blend. Adjust thickness and seasonings to taste. Serve hot or chilled. Garnish. Serves 4.
