CORN CHOWDER
 

1 lb. can cream style corn
1 sm. onion (chopped)
potatoes (cooked and cubed, quantity to taste)
1 can evaporated milk (diluted with on can water)
sm. piece salt pork (cut up in sm. cubes)
1/2 green pepper (chopped)

Saute salt pork until cooked thoroughly, add onion and green pepper. Cook until soft, being careful not to burn the onions or peppers. In large pot add all ingredients, except milk. Cook slowly. Add diluted milk. If you like a thinner consistency, add more water. Bring to rolling boil. Season with pepper. For garnish, place small pat of butter on top of soup in serving bowl.
