1 1/2 lbs. cod fillets 1/4 c. lemon juice 1 tsp. salt Bay leaf 2 slices onion 2 peppercorns In large skillet, bring 1 1/2 inches water to boil. Gently lower fillets into water, arranging in single layer. Add remaining ingredients. Cover and simmer until fish flakes easily, about 3 to 5 minutes. Remove fish to heated platter. Garnish with lemon slices and serve with drawn butter. Makes 4 servings. DRAWN BUTTER: Melt 1 cup butter, skimming froth off top. Pour clear butter (top) into serving dish. Discard milky sediment remaining on bottom. |
