CAJUN SHRIMP
 

2 tbsp. vegetable oil
1/4 c. chopped onion
1/4 c. chopped green pepper
1 clove garlic, minced
1 lb. med. shrimp, shelled & deveined
1 tbsp. Cajun seasoning
1 (14 oz.) can condensed tomato soup
1/2 soup can of water
1 tsp. lemon juice
Hot cooked rice

Heat oil in 10" skillet. Add onion, green pepper, garlic and Cajun seasoning and cook over medium heat for 4 minutes or until vegetables are tender crisp. Add shrimp. Cook 4 minutes more or until shrimp turn pink, stirring often. Add soup, water and lemon juice. Heat thoroughly, stirring occasionally. Serve over hot cooked rice. Serves 4.

A small amount of red food coloring will add to the appearance.
