1 lb. pasta (red and green preferable) 1 lb. cooked, cleaned shrimp (bay) 1/2 lb. steamed bay scallops 1 leek, trimmed, cleaned and chopped 2 c. mayonnaise 1/4 c. tomato paste Salt and white pepper to taste 1 tsp. dry mustard 1/2 tsp. tarragon Cook pasta to "al dente" stage. Drain; rinse and cool. Toss in the shrimp, scallops and leeks. Whisk together the remaining ingredients. Add to pasta-seafood mixture and combine thoroughly. Chill several hours. |
