2 lbs. med. shrimp, shelled and deveined 2 med. onions, chopped 1/2 c. olive oil 2 tbsp. tomatoes, peeled and chopped Several sprigs fresh parsley, chopped 2 tsp. salt 1/4 tsp. pepper 1 tsp. tomato paste 1/2 lb. feta cheese, crumbled In frying pan, saute onions in olive oil. Add tomatoes, parsley, salt, pepper, and tomato paste. Simmer 1 hour. In a 3-quart casserole dish, layer sauce, shrimp, and cheese. Bake uncovered at 350 degrees about 35 to 40 minutes. Serve over rice. |
