FRIED FROG LEGS
 

2-3 lbs. frog legs
1 lemon
1/2 tsp. salt (to taste)
1 med. pot boiling water
1/2 pot deep fryer oil
Pepper to taste
1 egg (for batter)
Dash paprika
1/2 c. flour

Use a medium pot and boiling water. Place lemon and salt in water. Place fresh skinned frog legs in boiling water for 5 minutes. Remove from water and cool in a strainer with running water. Towel dry.

Beat an egg. Dip frog legs in egg. Roll legs in seasoned flour. Drop in hot oil in deep fryer or skillet until golden brown. Remove, drain on paper towels. Serve warm with a green salad and a baked potato. Feeds: 4-6.
