1 doz. scalded crabs 1 c. chopped onion 1 lb. okra (canned or fresh) 1 c. chopped celery 5 c. deveined and peeled shrimp 2 fresh tomatoes 2 c. chopped ham 5 bay leaves 4 tsp. butter 5 c. hot water 1 lb. hot links 1 l. mild links 2 tsp. file (gumbo) Salt and pepper to taste 1/2 c. flour Melt butter in saucepan, add flour, saute onions and celery until brown. Add okra and cook about 30 minutes or until soft. Stir in tomatoes and gradually add hot water, bay leaves, crabs, shrimps, links and ham. Cover and simmer for 1 hour stirring often, add salt and pepper to your taste. |
