ICE CREAM COOKIE SANDWICH CAKE
 

2 pts. chocolate chip ice cream
1 pkg. Duncan Hines moist deluxe dark fudge cake mix
1/2 c. butter, softened

Use 9 inch foil cake pans. Spread ice cream in one pan, return to freezer. Grease and flour two 9 inch round aluminum foil cake pans. Place cake mix in a large bowl. Add butter. Mix thoroughly until crumbs form - place 1/2 cake mix in each pan. Press lightly. Bake in a 350 degree oven for 15 minutes or until brown around edges. Do not overbake.

Cool 10 minutes. Remove from pan. Place 1 cookie layer on serving plate. Top with ice cream. Place 2nd cookie layer on top. Wrap in foil and freeze 2 hours. Let stand at room temperature 5-10 minutes before cutting.
