BAKED DENVER SANDWICH
 

Preparation time: 20 minutes. Oven temperature: 375 degrees. Baking time: 35 to 45 minutes.

All the ingredients of the classic "Denver" sandwich are here, that fried sandwich with a ham, onion, and pepper omelette filling. We have turned around the method of preparation but it is still delicious and can be prepared ahead and then baked.

For 4 servings, you will need: 1/4 c. shredded Cheddar cheese 1 c. ground ham 1/4 c. chopped green pepper 1 tbsp. chopped green onion 3 eggs, lightly beaten 2 c. milk 1/2 tsp. salt Dash of cayenne pepper Alfalfa sprouts and sliced avocado (optional)

Trim crusts from bread. Arrange 4 slices, buttered side down, in 8 or 9 inch baking dish. Sprinkle with cheese, ham, green pepper, and onion. Place remaining slices, buttered side up, on top of filling. Beat eggs with milk, salt, and cayenne pepper. Pour over sandwiches in pan. Press each down with pancake turner to blend egg mixture into bread. Cover and refrigerate, if desired, as long as overnight. Or, bake at 375 degrees for 35 to 45 minutes until sandwiches feel firm to the touch and egg mixture is set. To serve, garnish each Baked Denver with a mound of alfalfa sprouts and sliced avocado.

Tips: To lower fat content, substitute smoked turkey or "turkey ham" for the ham.

Good served with: Fresh fruit platter and crisp vegetable sticks.

For 2 servings: Half of the ingredients but use 2 eggs. For 8 servings; Double the ingredients. Bake in a 13 x 9 inch baking pan.
