CHEESY DENVER SANDWICHES
 

1 tbsp. butter
2 tbsp. chopped onion
4 eggs, slightly beaten
1 1/2 c. shredded Cheddar cheese
1/2 c. cooked ham, diced
Salt and pepper to taste
6 buttered toasted sandwich buns

Saute onion and green pepper in butter until tender. Add to eggs along with 1 cup of the Cheddar cheese, ham, salt and pepper. Mix well. Preheat and butter a griddle. Use 1/4 cup mixture for each sandwich. Fry until eggs are set; turn and fry on other side.

Sprinkle remaining 1/2 cup cheese over tops. Serve on buns or eat as is.
