1 lb. cooked macaroni (spirals or tri-color) 1 c. vegetable oil 6 tbsp. red wine vinegar 2 cloves minced garlic 2 tsp. basil 2 tsp. salt 2-4 tsp. crushed red pepper 1/2 c. Parmesan cheese 4 c. broccoli (use fresh) 20 cherry tomatoes, halved 1 c. shredded Mozzarella cheese Blend first 8 ingredients in a large bowl. Cover and refrigerate. Just before serving, add the broccoli, tomatoes and Mozzarella cheese. |
