RANCHO SALAD
 

1 head lettuce, shredded
1 lb. chopped beef (lean)
1 pkg. taco seasoning
2 c. sharp Cheddar cheese, grated coarsely
1 can kidney beans, drained
Olives (black and-or green), sliced (amount to taste)
Tomatoes, chopped fine (amount to taste)
1 pkg. taco chips
1 c. Ranch salad dressing

1. Crumble and brown chopped beef, drain liquid and discard.

2. Add taco seasoning to browned beef and set aside to cool.

3. Place shredded lettuce, kidney beans, Cheddar cheese, olives, tomatoes, the salad dressing and a handful of taco chips crumbled in a large bowl. Add the cooled browned beef. Mix gently.

4. Cool until served. The circle the salad with the remainder of the taco chips.
