ASPARAGUS PASTA SALAD
 

4 c. diced asparagus
1 lb. rotini
1 c. sliced pepperoni
1 c. diced ham
1 c. diced mozzarella cheese
1 c. diced carrots or cherry tomatoes
2/3 c. olive or vegetable oil
2 tbsp. lemon juice
2 tbsp. wine vinegar
1 tbsp. minced basil
2 tsp. Dijon mustard
1 tbsp. grated Parmesan cheese
Salt & pepper

Steam asparagus until bright green and tender crisp (2 to 5 minutes). Plunge into cold water and drain. Cook pasta until tender and drain. In large bowl. combine asparagus, pasta, pepperoni, ham, mozzarella, tomatoes and carrots. Combine remaining ingredients in food processor or blender and blend until well mixed. Pour over salad and toss. Yields 6 to 8 servings.
