CRAB SALAD
 

1 lb. fresh crab meat
1 c. finely chopped celery
5 hard boiled eggs, shelled and chopped
1/3 c. mayonnaise
1 tsp. lemon juice
1/2 tsp. salt (optional)
1/4 tsp. Worcestershire sauce
Several drops hot Tabasco sauce
Dash coarse black pepper (or white pepper)
2 tbsp. homemade French dressing (see below)

1. In a large bowl, pick through crab meat to remove any remaining shells. Add celery and eggs.

2. In a small bowl, stir together mayonnaise, lemon juice, salt, Worcestershire sauce, hot Tabasco sauce, black pepper and French dressing.

3. Pour dressing mixture over crab mixture. Toss until well combined. Cover and refrigerate until ready to serve. Makes approximately 6 servings.

FRENCH DRESSING:

Combine:

3 c. vegetable oil
1 c. tarragon vinegar
1 1/2 tsp. salt
1 clove garlic, pressed in a qt. jar

Shake well before using.
