GERMAN POTATO SALAD
 

This is easier to make than it sounds and can be served hot or cold. It goes well with pork chops or roast, ribs.

4-5 potatoes
1 red onion
4 slices bacon
1 tbsp. flour
1 tbsp. sugar
1 tsp. salt
1/4 tsp. pepper
1/2 c. water
1/4 c. vinegar

1. Boil potatoes with skins on until tender, about 20 minutes. Drain.

2. Fry bacon until crisp in large frying pan. Crumble and set aside.

3. Chop onions. Fry in bacon fat until tender.

4. Stir flour, sugar, salt and pepper into onions over medium heat until bubbly. Add water and vinegar. Heat to boiling, stirring constantly. Boil 1 minute, then remove from heat.

5. Crumble bacon into onion mixture. Slice warm potatoes into pan. Return to heat and stir potatoes gently to coat with sauce until whole dish is hot and bubbly.

6. Can be served warm or cold. Serves 6-8 people.
