THREE BEAN MEDLEY SALAD
 

1 - 12 oz can of three bean medley (chick pea, kidney, brown)
half head lettuce
1/2 tsp garlic powder
1 tsp coriander
salt and pepper, to taste
2 whole carrots, shredded
half cup shredded cabbage
1 small green chili
2 tsp regular mayonnaise

Combine the lettuce, carrots, cabbage, and three bean medley in a serving bowl. Be sure to leave some of the marinade from the three bean medley, meaning, don't strain all of it to prepare this salad.

Next, add the chili, salt, pepper, and coriander. Now, toss once to ensure everything is thoroughly mixed. After this, add the garlic powder and the mayonnaise. Toss and mix once more and serve as an entree or a side dish.
