2 c. cooked rice 1 c. grated carrot 1/2 c. chopped celery 1/2 c. raisins 1/2 c. chopped nuts Toss together in large bowl with Lime Dressing. Refrigerate at least 2 hours. Keeps well for several days. LIME DRESSING: 1 c. salad dressing 1/2 c. sugar 1/8 tsp. salt 1/4 c. white vinegar (optional) 1/4 c. lime juice Mix well and pour on carrot mixture. Adjust seasonings to taste. |
