RICE STUFFED PEPPERS
 

4 lg. peppers
2 c. cooked rice
1 med. onion, diced
1 lb. ground pork sausage
1/2 c. herb seasoned stuffing
1 c. shredded Cheddar cheese

Parboil peppers in boiling water for 5 minutes. Drain. Brown sausage and onion mix. Add to cooked rice, stuffing, meat and onion, 1/2 cup of the cheese, stuff peppers. Bake in 350 degree oven about 40 minutes or until stuffing is hot. Remove from oven and spread remaining cheese. Bake until cheese is melted.
