RICE AND RICOTTA PIE
 

2 1/2 c. cooked rice
Ricotta (large)
1 1/2 c. sugar
6 or 9 eggs
1 tbsp. vanilla

Mix ingredients all together. Put in unbaked pie shell. Bake 60 minutes at 325 degrees. Fill pie pan 2/3 full as pie rises as it bakes. Shallow pie pan. Makes 3 pies.
