RICE AND BEEF PORCUPINES
 

1 lb. ground beef (or turkey burger)
1/2 c. rice
3 tbsp. chopped onion
1 tsp. salt
1/4 tsp. pepper

Other seasonings, such as: garlic, thyme, rosemary, parsley, sage and poultry seasoning may be added to taste.

3 tsp. melted shortening
2 cans tomato sauce and water (1 c.)

Mix beef, rice, onion and seasonings in bowl. Make into balls and brown in shortening. Drain off any fat. Add water, tomato sauce (whole tomatoes, and green pepper pieces may also be added for flavor). Cover pan and simmer for 45-50 minutes. Serve plain; over rice; as a side dish. Children love this!
